Gazpacho, por favor!

“The Spanish Smoothie”

Hola, everyone!

I’ve recently returned from Spain, spent few days with the family, you know,  hot days at the beach. And I saw my Mum making some Gazpacho. This brought to me good memories of when I was a little girl and would come up from the pool on an extremely hot day, my Mum would give me a nice and chilled glass of Gazpacho. LOVELY isn’t it?

I called it the “Spanish smoothie”. It’s very EASY to make and all the family loves it. It’s a tasty combination of vegetables, low in fat and sugars and very refreshing. It has to be served chilled or with some ice cubes (that’s the way I have it). And you can drink Gazpacho at any time, before or with lunch, as a healthy snack between meals or as a main in your supper (depends on how hungry you’re feeling).

So, would you like to know how to make a proper Gazpacho? Let’s go!

INGREDIENTS FOR 2-4 PEOPLE

1/2 KG RIPPED TOMATOES – very important to choose ripped tomatoes variety over those which come on 6 pack tomatoes from Tesco. It makes such a difference, intense flavour and redder color.

HALF OF A GREEN PEPPER

GARLIC (one clove) – I don’t usually put that much, just half of a garlic clove (it would be very strong). But if you are not planning on kissing anyone you can always add a bit more!

1/2 CUCUMBER (the Spanish cucumber has a stronger flavour than the one we can buy in England but we can still make a good Gazpacho)

3 tablespoons of EXTRA VIRGIN OLIVE OIL (the Extra Virgin Olive Oil from Sainsbury’s is really good!!)

4 tablespoons of WINE VINEGAR

1 SLICE OF WHITE BREAD (can be used soft white bread)

A PINCH OF SALT

1/2 of an APPLE (OPTIONAL) – My Mum uses half of an apple because the flavour can a bit strong if you have used too much garlic or vinegar. It’s up to you now 😉

INSTRUCTIONS: (using a food processor or blender)

1- Wash the vegetables. When you cut the Green Pepper, wash it and get rid of the seeds.

2- In the food processor bowl or blender. Crumble the slice of bread with your hands and dampen the bread with water. Cut the tomatoes into four pieces and put them in (I leave the skin on, it makes the Gazpacho get that red colour). Add the cucumber, peeled and cut into small portions. Add the Green Pepper, cut into small pieces too. Mix all together in the food processor for few seconds and then add the salt, olive oil and vinegar. Keep blending for another 30-40 seconds. Add some cold water (depends on how thick you like it) and keep blending. Serve chilled from the fridge or add some ice cubes.

I like Gazpacho very liquid, easy to drink from a glass. But sometimes, I add less water and pour it into a bowl, adding some small bits of chopped tomatoes, green pepper, onion and cucumber and you can have it as a refreshing soup!

And that’s how you make a real Spanish Gazpacho my friends! Do you like it a bit spicy? Well, you can always add a few drops of Tabasco.
